What does it take to establish a successful Spanish restaurant in Malaysia? Restaurateur Jeganathan Letchumanan shares his experience thus far. Truth be told, the humble owner of ‘La Cocina,’ Spanish Restaurant & Tapas Bar has much to be proud of.
After 15 years of operating a restaurant and with over 30 years of culinary experience under his belt, Jeganathan has certainly earned bragging rights when it comes to managing an F&B outlet. His passion for food was ignited in his early teens as he found himself working under the tutelage of a prominent chef, by the name of Zubaidah who had worked for important dignitaries and leading five-stars hotels back in the 60’s and 70’s.
Like all success stories, his journey was paved with many trials and tribulations that made him what he is today. Jeganathan defied the norm and pursued his culinary journey in Switzerland and excelled at both work & studies in German.
The highlight of his career began when he landed himself a job on board the world’s famous cruise line, The Queen Elizabeth 2 for twelve years. Working his way up the ladder of the hospitality industry, he progressed from being a wine sommelier to a highly reputable maître d’hôtel. His expertise in wine pairing offers customers at ‘La Cocina’ the privilege of enjoying the very best in food, wine and service.
The food at ‘La Cocina’ is prepared from the highest quality ingredients such as Spanish saffron, the world’s most expensive spice. Jeganathan mastered the art of French culinary with his years of training in Switzerland and has cleverly fused this technique in his Spanish cuisines. For example, the stocks and sauces used on the dishes are taken to a different level by using a reduction method, which takes at least six hours to prepare.
Spanish signature dish, ‘Paella’ which is rice cooked in saffron broth with seafood or meat is a must-try at ‘La Cocina’. Another dish is the ‘Paella Negres’, rice cooked in squid ink is sinfully good, making it a speciality. A large selection of mouth-watering Tapas adds up to its culinary climax. The dining experience at this gem of a restaurant is a definite must.
